It’s amazing how much time it takes to build 10 x 14 kitchen on wheels. And it’s not just the build out - it’s the massive to-do list of opening a business.
About a year ago, I decided it was time to take a risk – I quit my job in Human Resources and decided to open a food truck. I had no idea what I was doing but was determined to create something that would focus on preparing quality food from scratch.
It has not been easy, but man have I learned a lot about things I never would have imagined I would learn. I have also learned that I have some serious determination and I guess I can really call this a Labor of Love.
